After an after-hours fire destroyed Sanibel’s The Island Cow restaurant in August 2022, the restaurant is being rebuilt at 2163 Periwinkle Way. Stevens Construction is building the 5,754-square-foot restaurant with indoor and outdoor dining, and a commercial kitchen with a walk-in cooler and freezer. The restaurant will feature Florida-style details such as a metal roof with a thatched roof entryway, outdoor tiki bar, indoor/outdoor bar and vibrant colors. The new Island Cow will be 1,000-square-foot larger than the original building, which had been an island staple for more than two decades. Construction is slated to begin in August and expected to be completed in spring 2024.
